Bacon Butternut Squash Soup

F A L L has officially made its arrival in Manitoba 🍂
What better way to keep warm than with a nice batch of soup? This one has all the fall vibes.
Start by cooking 1-2 slices of bacon (watch the ingredients for added sugars, we don’t want that!) in a frying pan. Once the bacon is cooked, take it out, chop it up and put it to the side for later… SAVE the fat!
In a soup pot (or
#instantpot if you have) combine chicken broth- bonus points if you make your own, diced butternut squash (fresh or frozen works!) and that left over bacon grease.
Simmer over low-medium heat until squash is soft and then take a hand blender to purée it. Add in some salt, pepper, onion powder, garlic powder, red Chili flakes and that bacon we cooked earlier, you’ve got yourself the perfect fall soup!
